Worker at tortilla factory... it is extremely hot and notice how beautifully and professionally she is dressed for this hot, dirty work.
Worker in the lye vats working the corn for the flour. The corn comes in whole and dried then is soaked and cooked in large vats of water and lye.. then rinsed and ground for the Masa. The tortilla's are absolutely wonderful!!

Miss Jaque' made us Belizian beans and rice with a wonderful spicy homemade gluten topping and salad.
Dinner Prep. Cooking 3 meals per day is a lot of work for 40 people!!
Beginning work .... mixing concrete by hand, carrying water, sand and gravel in 5 gallon buckets.
Rock brigade. You would pay a premium price for this beautiful white rock in the states. We use this for landscaping, they use it for fill!!
